Our Food

We are a gastro pub and passionate about food.  Our chefs and our carefully selected suppliers source  the best possible ingredients the local area has to offer.

We are very lucky, not only to be nestled in the heart of game country but also to be surrounded by some fantastic natural produce.

Virtually everything is made and prepared in our kitchens so we can ensure the quality of the ingredients used in the dishes we serve.


From British classic pub food to special fusion & seasonal dishes created by our chefs for you to enjoy.




As we produce everything ourselves we can cater for all dietary requirements and intolerances so please let us know and and we are happy to offer alternative suggestions or to create something that is not on the menus.

Working closely with our suppliers, we have constant opportunities to create dishes that are a joy to cook and eat.  All with the peace of mind that it is local and fresh.

As a result, specials on the board are changed regularly to reflect what is local and fresh.  It gives the chefs the opportunity to express themselves and we hope that you will enjoy the variety of ingredients & flavours.

The Team

  • The Silks on the Downs is run by Fraser Digby, often found behind the bar or helping out in the kitchen when he is allowed to.  Passionate about good food and always willing to have a chat.

Helping Fraser front of house is Carol who keeps the place running with a smile and attempts to stop Fraser chatting too much. Carol is ably assisted by Ben, Harry, Simon, Lorna and Imogen.


Obviously any decent gastro pub is defined by it's kitchen and the Silks is no exception.  Head chef is Paul Schultz who trained at Rick Steins and worked in a number of their locations. Helping Paul in the kitchen are Scott, John, Joe, Cameron and Dan.  Paul cares deeply about local ingredients and producing a great plate of food.  The kitchen is his domain - enter at your peril.

Our suppliers

Good fresh food that is local deserves respect and working with trusted suppliers knowing that the ingredients can be traced to source is a real pleasure.

Sumbler Bros

A family run Butchers based in Marlborough who supply the Silks with all our meat. Beef is sourced locally from traditional breeds such as Devon Ruby Red, Aberdeen Angus & Dexter Cows.  Lamb is also sourced from a selection of local farms. 

Pork is supplied from Sandridge Farm which is quality outdoor reared and they provide us with traditionally cured Wiltshire Bacon and Hams.

Poultry is sourced from Wolley Park Farm who provide dry plucked chickens, guinea fowl, Aylesbury Duck and Quail.  

The Burbage sausages they produce for us are created from local pork with Shiitake mushrooms provided by Dewi at Marlborough Mushrooms.

Suppliers of top quality fresh fish & shellfish to restaurants for over 25 years. 

They deliver superb quality, responsibly sourced seafood direct from the coast to the restaurant daily, so guaranteeing the freshness we demand.

Heritage Fine Food Company 

Based in Devizes they supply all of our Fresh Fruit, vegetables & dairy products.  As well as meeting our regular needs they are second to none in sourcing a great supply of seasonal produce from their pick of local farms & surrounding areas.
